I really like "Flügel der Freiheit" and "Sind wir das Essen" in Attack on Titian.
But I also like "We Are" in One Piece.

As cheesy as it may be, i would have to go with Zankoku Na Tenshi No Thesis of Neon Genesis Evangeion for the sheer fact it brings me back to my childhood when i was introduced to anime for the first time.
